Super Salads

Everyone likes salad.  It is the time of year for fresh from the garden ingredients and salads are the perfect way to enjoy all the abundance.  Salads can be served as a side dish but are also being served more and more as a main course.  I like to serve a simple green salad after a meal. There are an infinite way to create different salads and then there are the vast amount of delicious salad dressings to choose from.  My simple vinaigrette is something often requested…..I actually salt and pepper the salad bowl first, then add 1/4 cup olive oil, 2TBS red wine vinegar, and splash of lemon.  Whisk together and then place my greens on top, and toss.  So easy and delicious.  To make your salad a meal in itself you can add some protein….chicken, shrimp, beef, fish.  I find a salad spinner a wonderful tool in the kitchen….much easier than wrapping the greens in a dish towel etc.  So do not be lazy when it comes to salad……it is healthy fresh and delicious.

Pictured here is Cindy’s Famous Chop Chop Salad.  I used to own a diner and we served a ton of this great salad. The idea is to chop all the ingredients into small pieces.  I use grenn olives stuffed with pimentos, genoa salami, provolone, romaine lettuce, tomatoes, and onions.  I toss with my vinaigrette and enjoy.
