Eggplant Parmesan

Eggplant is a versatile vegetable.  It can be fried, broiled, grilled and mashed.  But an all time favorite recipe for this veggie is eggplant parmesan.  Have olive oil,eggs, breadcrumbs, tomato sauce and Italian cheeses on hand.
