Spinach and cheese filled phyllo triangles

  • 30 oz chopped frozen spinach
  • 1 large onion, chopped
  • 3 tbsp butter
  • 1/2 cup parmesan cheese
  • 1/2 cup feta
  • 3 eggs
  • 1 stick of melted butter
  • 1 lbs of frozen phyllo pastry sheets
  • salt and pepper
  • Defrost spinach and press out water,
  • Saute onion in 3 tbsp butter until translucent, add spinach and heat through.
  • Remove from heat and add beaten eggs, cheese and season with salt and pepper.
  • Stack 3 sheets of phyllo with melted butter brushed on between the layer.
  • Cut into 3 inch wide strips and place a spoonful of spinach filling at one end of the strip and fold phyllo like a paper football, enclosing the filling and end up with a triangle
  • .repeat until all the phyllo is used.
  • Brush with melted butter,
  • place on butter baking sheet and bake for 20 minutes at 350.
