Cindy's famous stuffed artichokes

 This is a recipe I am often asked for.  Artichokes are fun and delicious to eat.  The stuffing is a classic Italian one of cheese and breadcrumbs.


3 artichokes, 3/4 cup bread crumbs, 1/2 cup grated romano or parmesan or combination, 2 cloves garlic minced fine, 2TBS Italian parsley chopped fine, 1/4 cup olive oil, 1/4 tsp salt, 1/4 tsp pepper


Cut stems from artichokes, cut top off of artichoke so tops appear flat, cut thorns off leaves with a scissor. Place in a saucepan so artichokes bottoms are flat on bottom of saucepan. Add about an inch of salted water for steaming. Steam artichokes for about an hour or until you can pull a leaf from artichoke easily. When done let artichokes cool. In a food processor or in a bowl combine bread crumbs, grated cheese, garlic and parsley, s and p. Add olive oil. Stuff artichokes over a dish by spreading the leaves so you can get mixture in between. Bake at 350 for half an hour. Serve as an appetizer or with meal.
