| Directions: The flavor of this dish is more influenced by the cooking time then anything else. Cooking them at a low temperature for hours caramelizes the tomatoes and gives them that sweetness associated with sun-dried tomatoes, only fresher. Cut the ends off the tomatoes and slice them in half, or make chunks if you want to serve them over pasta. Drizzle oil over the slices on both sides in the baking dish, salt and pepper to taste, cover and place them in a 300 degree oven. After 1 1/2 hours, spread chopped garlic over them and return them to the oven for another hour. Remove the cover and sprinkle basil and oregano over the top of the tomatoes. Let them cook for another 15-30 minutes uncovered and they're done. If you want, sprinkle crumbled cheese over them before removing them from the oven and just melt it. Blue cheese is a good choice, but any cheese you like is fine. |
