Lobster Bisque

Can serve in a small bread bowl or alone with hot crusty bread.

  •  lobster tails-cut into 2 inches piece with shells on
  • 1 small can of crab meat
  • 12tablespoons unsalted butter
  • 1 cup diced carrots
  • 1 cup diced onions
  • 1/4 cup diced shallots
  • 2 tablespoon chopped Itlaian parsley
  • 1 teaspoon tarragon
  • 6 tablespoons brandy
  • 2 1/2 cups of lobster stock(if you can get it) or clam, fish or chicken stock
  • 2/3 cup dry white wine
  • 3 tablsepoons Maderia wine
  • 1/2 flour
  • 3 cups milk
  • 3 cups half and half
  • 2 ripe tomates diced
  • salt and peper 
  • melt  half the butter in a stock pot over a medium heat and saute carrots, onions and shallots for 5 minutes, do not brown
  • add lobster pieces, stir and cook for 5-7 minutes or until the shells have turn red
  • turn flame on high and add brandy, half of the stock and wine
  • lower temperature to simmer and cook for 15 minutes then remove from heat.
  • remove lobster piece, cool and pick the meat out of the shells.  Reserve the meat in a bowl, add crab meat and pour maderia wine over the meat, stir and cover the bowl.  Refrigerate until needed
  • chop the lobster shells into 1 inch pieces and add to the tomatoes
  • in a separate stock pot, melt remaining butter and whisk in the flour in to make a roux
  • heat milk and half and half to warm and slowly add to the roux while whisking all the time to keep away lumps. Cook for about a minute under a simmer
  • add tomatoes and lobster shells, remaining stock, tarragon and parsley and broth from the saute
  • cover lightly and simmer for 45 minutes making sure that the botton doesn't get sticky. Stir frequently
  • remove from heat, remove large pieces of shells and strain the soup into a large bowl.  Remove the remainder of the lobster shells. Place the soup back into the stock pot and using the emulsion blender, blend the vegetables until smooth
  • chop the lobster meat into smaller piece and add the enitre bowl or shellfish and maderia wine to the soup, heat through, salt and pepper to taste
