Avgolemono Greek Chicken Lemon Soup

 This is a classic Greek soup.  You can find it served in many Greek diners.  It is easy  to make and delicious.

Ingredients:
  • 1 large chicken breast 
  • 6 cups chicken broth  (boxed or home made)
  • 1 onion 
  •  1 small carrot
  • 1 stalk celery
  • 1 cup long grain rice
  • 1 bay leaf
  • 2 eggs
  • juice of 2 lemons
  • 1 tsp lemon zest
  • 1/2 tsp salt
  • pepper to taste
Directions:
  • In a soup pot bring chicken broth, chicken breast, carrot, onion, and bay leaf to simmer for 1/2 an hour
  • Strain soup, throw out vegetables, and dice chicken breast
  • Set chicken aside
  • Add rice to simmering broth and simmer 20 minutes
  • Add chicken back to soup
  • Turn off heat 
  • In a separate bowl whisk the eggs and lemon juice together til frothy
  • Add about a cup of the warm stock to egg mixture
  • While whisking add the egg mixture into the soup
  • Season with salt and pepper to taste
  • Serve
