Irish Soda Bread
Michele

A family tradition, a must for St. Patrick's Day, but best toasted, buttered and served with a strong cup of tea.

Ingredients:
  • 4 cups flour
  • 1 tsp salt
  • 1 tsp baking soda
  • 2 cups buttermilk, plain yogurt also works

 OPTIONAL:

  • 2 Tbs sugar
  • 2 Tbs melted butter
  • 3/4 cup raisins, soaked in warm water
  • 2 Tbs caraway seeds
Directions:

Lightly grease a cookie sheet or baking pan.  Preheat the oven to 375.

Mix all the dry ingredients together in a large bowl. Make a well in the middle and add buttermilk, 1/4 cup at a time, mixing as you go, Use your hands to knead the dough. It should be thick and sticky.

Now is the time to add your options, and I would recommend, at least, the raisins and caraway seeds, but be creative here.  Some people add orange zest, some an egg, Honey would work instead of sugar.  There are no rules.

Scoop the dough unto the greased cookie sheet and shape it into a mound.  Think mud pies.  Pop it in the oven and bake about 50 minutes or until a knife stuck in the center comes out dry.
