Chicken Pesto Pasta

 This is a pasta that works well for a party.  It is a meal in itself and it is chock full of texture and flavor.  It is easy to make and a real crowd pleaser.

  • 1 lb pasta like fettucine or penne 
  • For pesto- 2 bunches fresh basil. 1/4 cup toasted pine nuts, 2 cloves garlic, 1/4 cup olive oil, 1/4 cup grated cheese, salt and pepper
  • 1/4 cup olive oil
  • 5 cloves garlic minced
  • 2 shallots or one medium onion minced
  • 1 small can diced tomatoes
  • 1 lb chicken breast thin cut
  • wondra flour for dusting chicken
  • olive oil to saute chicken
  • 1 cup chicken broth
  • 1/4 cup grated cheese
  • 1/4 cup toasted pine nuts for garnish
  • Bring a large pot of salted water to boil and make pasta el dente.  When done drain and set aside.  Drizzle with olive oil and toss to prevent from sticking
  • To make pesto-clean basil.  In food processor mince garlic, add basil, toasted pine nuts and plse pouing olive oil through tube til combined.  Add parmesan cheese and combine.
  • Cut chicken into bite size pieces and dredge in wondra flour (can substitute regular flour sifted).
  • In a large skillet cover bottom with olive oil and when hot brown chicken in batches til cooked through about 3 minutes each side. When done deglaze skillet with some chicken broth or white wine and pour liquid over chicken and set aside.
  • In the same large skillet cover bottom with olive oil and add onion and garlic when hot, being careful not to brown. 
  • Add can of diced tomatoes.
  • Add remaining chicken broth
  • Add chicken and cooked pasta
  • Add pesto and combine
  • Sprinkle with cheese and additional toasted pine nuts and serve.
