Potato Salad With Home Made Mayonnaise

Ingredients:
  •  1 lb small baby red potatoes boiled til tender and most skins removed
  • 1 cup extra light olive oil
  • 1 egg
  • 3 scallions diced green part discarded
  • 2 shallots
  • juice from 1/2 a lemon
  • 1 TBS apple cider vinegar
  • 1 tsp salt
  • 1/2 tsp pepper
Directions:
  • Boil potatoes til tender (about 40 minutes
  • Remove most of skins leaving some for color
  • Cut potatoes into bite size about an inch by an inch
  • Toss in vinegar  and a little olive oil and set aside
  • For mayonnaise....In food processor add egg and process til combined
  • Stream olive oil with blade running til fluffy l
  • Add lemon juice and salt pepper and combine
  • Dice fine the shallot and scallions..set aside a TBS for garnish
  • Combine shallots scallions and mayonnaise with potatoes
  • Garnish with scallion and shallot and serve warm or cold
