Hayley's Couscous and Tofu with greens

 One of Hayley's creations

Ingredients:
  • 2 heads romaine lettuce, cleaned and cut into bit size pieces
  • 1/2 package extra firm tofu, sliced into into 1/4 inch slices and drain on paper towels
  • 2 tablespoons coconut oil
  • 1 small package of coucous prepared by package intructions
  • 1/2 red onion
  • 2 small dices tomatoes
  • 1 avocado pitted, peeled and sliced into cubes
  • a can of white beans, rinsed and drained
  • 2 garlic cloves minced
  • 1/4 cup of your favorite Italian dressing
Directions:
  • cut tofu into slice and press between paper towels to take away excess water
  • heat coconut oil in a frying pan, add garlic and when the oil is hot fry the tofu until golden on each side
  • when tofu is cooking, prepare couscous and set aside to cool
  • in a large salad bowl, place all the veggies
  • dice tofu when it is cool enough to handle and then add to salad
  • top with couscous and salad dressing
