| Roasted Chicken with Tomatoes and Olives |

Ingredients:
- whole chicken cut up into pieces
- 2 containers of cherry or grape tomates
- 1 cup of pitted black olives halved
- 4 garlic cloves
- 1/2 red onion
- 3 tablespoon olive oil
- 1/2 cup of white wine
- 1/4 cup chicken stock
- salt and pepper

Directions:
- rub oil over chicken and set aside
- mix veggies with liquids and place into a roasting pan
- place chicken skin side in veggie mixture
- place in pre-heated oven for 45 minutes or until the chicken is golden brown
- remove chicken to a platter
- slightly mash the veggies and pout over the chicken
