Botswana Baked Polenta

Ingredients:
  • 2 quarts water
  • 1 vegetable stock cube
  • 1 box of instant polenta
  • 1 jar of tomato onion relish
  • 1 1/2 cups grated cheddar cheese 
Directions:
  • boil water and add stock cube
  • slowly add polenta and cook to instructions until thicken
  • oil a coast iron pan
  • start layering the pan with polenta, relish and cheese ending with the cheese
  • bake in a pre heated 350 oven for 15 minutes or until the cheese is bubbling
