Chicken Tarragon Salad
  • 2 large split chicken breast with one and skin on
  • 1/2 cup mayo,2tbsp dijon mustard
  • 1 tbsp dried tarragon leaves
  • 2 stalks celery
  • 1/2 onion onion salt and pepper
  • rinse chicken breast and place in baking dish skin side up
  • Bake for approx 30-40 minutes depending on the size of the breasts. Look at the side of the breast and if its' split then its' probably done or check with a meat thermometer 
  • Take out and place on a plate to cool
  • While the chicken is cooling
  • chop onions and celery and add to small bowl
  • mix mayo,veggies, tarragon and salt and pepper to taste
  •  When the chicken is cool enough,take off the skin and begin to put it apart
  •  Add pieces to the bowl, mix together and chill in the fridge
