Steak and Black Bean Chile

 I often make this chile when I have left over steak on hand.  It is thickened with Harina de Maiz which is like a corn meal.  It is visually appealing with the black beans and toppings like fresh cilantro, sour cream, shredded cheese, and onions.  This is the one they will ask you for the recipe.  Hearty and delicious.


Any leftover steak about  1lb -2lbs or tender cut of beef like NY strip cit into bite size pieces

1 large can black beans rinsed

3 TBS hot sauce (any combination in those little bottles)

1 medium onion diced

1 small can diced tomatoes

1 can beef stock or 1 cup water

2 bay leaves

1/2 cup corn meal (Harina de Maiz) or crushed nacho chips

3 TBS Vegetable oil to cover bottom of pot

1 TBS cumin

5 TBS paprika or chile powder

1/4 tsp cayenne pepper

salt to taste

cheddar cheese, sour cream, and chopped onion for garnish






  •  Heat up pot and add diced onions and sweat out with bay leaves
  • Add corn meal pepper hot sauces and spices...... cook 5 minutes
  • Add steak and brown
  • Add rinsed beans
  • Add tomatoes and stock or water
  • Let simmer for 1 hour or so
  • Garnish with cheddar cheese sour cream and chopped onion (optional), and fresh cilantro
