Simple Classic Tomatoe Sauce (Mainara)

Ingredients:

2 28oz can whole peeled tomatoes (can subsitute crushed tomatoes) 1/4 cup olive oil, 1 diced medium onion, 5 cloves minced garlic, 2 TBS dried basil or handful fresh basil, salt and pepper to taste, crushed red pepper flakes (optional)

Directions:

Pour olive oil in bottom of saucepan. Saute oions, garlic, basil, hot pepper flakes, salt and pepper til soft about 5 minutes. Add tomatoes. Cook on simmer after you bring up to almost a boil. Crush the tomatoes with a food processsor in batches, a potato masher works fine, can also pass through a seive with a handle.Let simmer on a the stove for about an hour. This sauce is perfect with pasta. So easy...and much better than any jar.
