Fruit Crisps
  • 2 lbs(? how much is that? maybe a small collander full)Fruit... apple, pear, peach, berry, plum
  • 1/8 to 1/4 cup of sugar on the fruit( depending on the desired sweetness)(optional)
  • lemon
  • 2 cups flour
  • 3/4 cup brown sugar
  • 1/4 cup granulated sugar
  • 2 sticks cold unsalted butter cut into pieces
  • 1/2 cup rolled oats(optional)
  • 1/3 cup Walnuts or other nut(optional)
  • Wash, slice, pit, and/or peel the  fruit and place into a bowl.
  • Squeeze a half lemon over the fruit to retain a fresh color and to add flavor. You can also use and orange here, which is very nice in the Plum Crisp.
  • Sprinkle the fruit with a tablespoon flour and  a 1/4 cup of sugar(optional)
  • Mix the brown sugar, sugar, flour and butter together. You can do this with your hands, a fork, or your kitcthenaid mixer. Do not mix it perfectly even. It is best if it is a little sandy and chunky.
  • Add oats or nuts if desired
  • Butter the pan or baking dish
  • Pour the fruit mix into the pan.
  • Sprinkle or arrange the top of the fruit with the "crisp" topping layer.
  • Bake for 55 minutes at 375 or start at 400 then turn down to 375 aftyer 10 minutes.
