Cold Ziti Salad
CindyThis is good for a party or barbecue for about 12. It is a family favorite and always a hit. It is visually appetizing and always someone will ask you for the recipe!
Ingredients:
  •  1 1lb box ziti or penne
  • 1/4 cup milk
  • 1 small red onion choped
  • 1 shallot chopped
  • 6 sweet pickles chopped with 1 TBS juice
  • 2 small peppers (2 different colors) seeded and chopped
  • 2 tomatoes chopped
  • 1 1/2 cup sour cream
  • 1 1/2 cups mayonnaise
  • 2 buillion cubes or packets beef builion (Knorrs)
  • 1 TBS wine vinegar
  • 1 1/2 TBS salt
  • fresh ground pepper
  • 3 TBS chopped fresh dill
Directions:
  •  Make the ziti el dente and rinse in cold water.....
  • In a large bowl moisten the ziti with the milk and toss
  • Chop the tomatoes, peppers, and pickles, shallot and onion into 1/4 inch cubes.  Reserve a combination of these chopped vegetables for garnish.
  • Whisk together the sour cream, mayonnaise and builion powder until creamy.  Add to ziti
  • Add the peppers, pickles, tomatoes, onions, and shallots, and pickle juice, and vinegar to ziti and mix til well blended.
  • Garnish with reserved peppers, pickles, tomatoes, and fresh dill.
  • Serve chilled.
