Lisa's Vt Maple Syrup Frosted White Cake

  •  1/2 cup shortening
  • 1 1/2 cup sugar
  • 2 eggs
  • 1 tsp. vanilla
  • 2 1/4 cup flour
  • 1 tsp baking powder
  • 1 tsp baking soda 
  • 1 cup sour milk  (or add a splash of vinegar to the milk)

For the Frosting

  • 2 egg whites
  • 1 cup pure VT Maple Syrup



Cream together 1st four ingredients,  You can do this by hand in a mixing bowl with a fork. Add the flour, baking powder, baking soda and sour milk, or milk with a splash of vinegar. Mix well and bake for 30 minutes or until toothpick comes out clean.

To make the frosting, Beat the egg whites until they form stiff  peaks. Boil the Maple Syrup in medium sauce pan until it spins a 6 inch thread, (You'll know it when you see it).  Slowly pour heated syrup into beaten eggs and beat again until stiff peaks form.  This could take up to 7 minutes so be patient.  

Don't frost the cake until it cools.
