Best Italian meatballs
  • 1 lb chopped meat (1/3 veal, 1/3 pork, 1/3 beef if you can get it)
  • 2 eggs
  • 2 TBS fresh Italian parsley chopped
  • 1 piece of white bread rinsed in water and squeezed of excess water
  • 1/2 cup grated parmesan or romano cheese
  • olive oil enough to coat bottom of friyng pan to prevent sticking
  • 1/4 tsp salt 
  • 1/4 tsp pepper

Mix all ingredients in a food processor, or by hand...just dig in and toss with bare hands til combined. Form into balls (wet hands prevents sticking to hands). Place directly in hot frying pan coated with olive oil. Brown and keep flame low enough that meatballs cook through. Can be placed directly in sauce to finish cooking being careful not to add grease.
