Sausages and Peppers

 So easy to make.  Try a local Italian grocer or gourmet shop for the wonderful variety of sausages avaiable today!

  • 1 lb Italian sausages (sweet or hot)
  • 3 peppers any color sliced in strips seeds removed
  • 1/4 cup olive oil
  • 1 large onion cut in strips
  • dash oregano
  • salt and pepper to taste
  • Place sausages in a frying pan fill half way with water and simmer on stove til water evaporates turning once.  When water is gone sausages will brown easily.  Set aside.
  • In a clean frying pan add olive oil til hot and add slices of onion and peppers dash oregano salt and pepper and simmer til tender
  • Add back the cooked sausages and toss and serve.
