Penne Ala Vodka

Ingredients:
  •  1 lb penne or rigatoni (any shape you like) cooked el dente reserving 1/2 cup of pasta water
  • 4 pieces prosioutto (Italian ham) diced (can easily omit this for a vegaterian dish)
  • 1 tsp red hot pepper flakes
  • 1/4 cup olive oil
  • 1 small onion diced
  • 3 cloves garlic minced
  • 1 cup tomato sauce 
  • 1/2 cup heavy cream or half and half
  • 1/2 cup pasta water
  • 1/4 cup vodka (optional)
  • 3 basil leaves shredded
  • salt and pepper to taste
Directions:
  •  Boil water for pasta and follow directions on box.  Add a little olive and set aside.
  • In large frying pan add olive oil.  When hot add hot pepper flakes, onion, and garlic.  Saute til soft without browning.  Add prosioutto for one minute.  Pour vodka in and let evaporate.  Add tomato sauce and cream and stir.  Add cooked pasta and toss with sauce.  Add pasta water to thin sauce.  Sprinkle with basil and serve.
