Spaghetti Alla Carbonara

 Italian pasta with bacon and eggs!  Creamy decadant and delicious.  Easy to make.   Perfect in a small portion as a first course and hearty enough for a main course.  

  • 1 lb spaghetti
  • 1/4 cup olive oil
  • 3 eggs
  • 3/4 cup grated parmesan cheese
  • 1/2 cup cream
  • 12 oz bacon cut up into 1/4 inch strips
  • 1 large onion diced
  • 1/4 cup reserved pasta water
  •  salt and pepper to taste
  • parsley for garnish
  • Boil salted water and add pasta and cook according to directions for el dente....drain and set aside tossed with olive oil to prevent sticking 
  • In separate bowl scramble eggs with a whisk and add 1/2 cup grated cheese and cream...combine to form a paste like consistency
  • In skillet add bacon and cook til almost not drain
  • Add olive oil and onions and cook til soft
  • Add cooked pasta and combine ingredients til heated through
  • Turn off heat and add egg and cheese mixture and toss
  •  Thin with reserved pasta water
  • Salt and pepper to taste
  • Garnish with parsley and serve immediately
