Broccoli and Peppers

 A favorite in our house, over rice or quinoa as a main meal, as a side dish, salad or sandwich.  It can be served hot, warm or cold and still taste good.

Ingredients:
  • large head of broccoli
  • 1Tbsp olive oil
  • 2 cloves garlic, chopped or a tsp. of the jarred
  • Kalmata olives or a can of black olives
  • 1 roasted red or yellow pepper diced,  oruse jarred red sweet peppers, they work fine
  • 1 Tbsp. chopped fresh parsley or 1 tsp. dried
  • 1/2 tsp. dried marjoram or 2 tsp. chopped fresh
  • 1oz. (or more, this is my favorite part) feta cheese, crumbled
  • salt and pepper to taste
  • Lemon slices, optional but especially good if you serve as a warm salad
Directions:

 Cut the broccoli into medium sized florets and steam it for about 3-4 minutes.  Heat the oil and garlic over medium heat and add the broccoli, peppers, parsley and marjoram. Saute over medium heatuntil warmed through only a few minutes.  You can also heat the olives, I serve them on the side. Sprinkle the cheese over the top or serve on the side. Salt and pepper to taste.  As a main dish, serve over quinoa or brown rice cooked according to package directions.
