Linguine with Arugula Pesto

Ingredients:
  •  1 box of linguine
  • 4 cups of fresh rinsed arugula
  • 1 cup of  fresh mint leaves
  • 8 cloves of garlic
  • 1/2 cup pine nuts
  • 2/3 cup of olive oil
  • 1/4 cup of parmesan cheese
Directions:
  • Make the pesto first-combine fresh leaves, garlic, nuts, salt and pepper and pulse until coarsely chopped in the food processor 
  • while the motor is running, slowly drizzle the olive oil into the machine to make the pesto
  • boil the water and add pasta, cook and drain
  • pour into serving bowl and stir in pesto and grated cheese
