Pureed Veggie Soup

Ingredients:
  •  1 head  broccoli cut up
  • 1 head  cauliflower cut up
  • 2 garlic gloves
  • 1/2 chopped onion
  • 1/2 red bell pepper
  • 2 large containers of chicken or vegetable stock
  • 1/4 cup of grated parmesan cheese
Directions:
  • bring all ingredients except cheese to a boil on the stove
  • cover and reduce heat to a simmer
  • when veggie are soft, remove from heat and set aside
  • take emulsion blender and blend the veggies to a chuck style
  • add cheese

Serves:4-6 easy
