Lentil Soup

 This is an easy, healthy and inexpensive delicious soup.  I like to serve it with some fresh sauteed greens on top like spinach or escarole.  

Ingredients:
  • 1 lb bag lentils rinsed
  • 1/4 cup olive oil
  • 2 slices bacon diced
  • 1 medium onion diced
  • 2 cloves garlic minced
  • 1 bay leaf
  • 1 small can diced tomatoes
  • 2 carrots peeled and diced
  • 2 stalks celery diced
  • 1 quart water or i box chicken broth
  • 1 tsp salt
  • 1 tsp pepper
  • 1 lb small pasta like ditalini
Directions:
  • Cover bottom of a soup pot with olive oil and heat
  • Add bacon and cook til just browned
  • Saute the onion garlic, carrot, celery, bay leaf
  • Add lentils,can of tomatoes, and water or chicken broth.  Add salt and pepper.  Water can be added to desired consisitency at anytime
  • Bring to a boil and then put on low 2 hours or longer.
  • With a mixing wand mash lentils to desired consisitency. Can do this in batches in a food procesor or blender
  • Boil 1 lb of pasta seperately, drain and set aside toss with a little olive oil to prevent clumping
  • Serve soup with pasta
  • Optional serve with sauteed greens on top of soup
  • Add salt and pepper to taste.
