Vegetable Stock

Ingredients:
  • carrots
  • celery
  • onion
  • potato
  • leafy greens such as chard or kale or parsley or all of these
Directions:

Put the vegetables in the stock pot and cover with water.

Turn the stove on high for half an hour then turn it to medium or low and let it simmer and cook the liquid down a few inches during the day. The stock gets better as it cooks down.

When done, drain through a colander.

The vegetables might be useable to put in your dogs food.

Freeze in containers to use later in soups.
