Ricotta Gnocchi Homemade

Ingredients:
  •  1 lb ricotta whole milk
  • 1-1/12  cups flour
  • extra flour for rolling out
  • 1 large egg
  • 2 tsp salt
Directions:
  • Beat lightly the egg in a large bowl
  • Add the ricotta and flour and salt and combine to form a ball
  • Place ball on a floured surface and kneed til no longer sticky
  • Break into small balls about a handful
  • Roll into strips and cut into one inch pieces
  • Roll with thumb or can roll over fork or gnocchi board to create creases
  • Place in single layer on parchment paper sprinkle with flour
  • Cover with damp clean dish towel til ready to boil
  • Place as quickly as possible into salted boiling water until floating
  • Serve immediately with marinara or sauce of choice
  • Can be frozen if you will not be boiling same day
