Beef and Barley Soup

Ingredients:
  •  1 lb. leftover steak diced or if using fresh steak first brown and then dice
  • !/8 cup olive oil
  • 2 carrots diced
  • 1 medium onion diced
  • 2 stalks celery diced
  • 2 cloves garlic minced
  • 1 bay leaf
  • 2 cans beef broth
  • 1 cup barley boiled for 1/2 an hour
  • salt and pepper to taste
Directions:
  • Cut up any leftover steak in small pieces and set aside.  If starting with a fresh steak brown in soup pot remove and cut up into small bites and set aside
  • Prep diced vegetables by using a food processor or by hand
  •  Heat soup pot and add olive oil.  When hot add diced onion, carrots, carrots, celery, garlic and bay leaf...cook 10 minutes to sweat
  • Add beef, beef broth, and barley
  • Bring back to temperature and then simmer for about an hour
  • Salt and pepper to taste
