Parmesan Crusted Filet of Sole

Ingredients:
  • 1 lb fresh filet of sole
  • 1/4 cup olive oil
  • 2 eggs lightly beaten with 2 TBS water
  • 3/4 cup breadcrumbs (unflavored)
  • 1/2 cup freshly grated parmesan cheese
  • 1 lemon
  • salt and pepper
  • parsley for garnish 
Directions:
  •   Mix eggs with water and set aside in a bowl
  • On a plate mix together bread crumbs and grated cheese season with salt and pepper
  • Wash and pat dry filets
  • Dredge filets first in egg and then in bread crumb mixture
  • Heat olive oil in a warm frying pan
  • When hot add filets being careful not to crowd
  • Brown on each side turning once...3 minutes on each side or until cooked through
  • Put on a platter and squeeze lemon over all
  • Garnish with parsley
