Cold Dill Shrimp

Ingredients:
  • 1 3/4 lb. raw (cleaned and deveined) shrimp
  • 2 Tbsp sweet butter
  • 1Tbsp olive oil
  • 2Tbsp minced red onion
  • 1 Tbsp minced garlic
  • 2Tbsp fresh lemon juice
  • 2Tbsp chopped fresh dill
  • salt and pepper
Directions:

If shrimp need to be thawed, place in strainer and run like warm water over them until thawed. Chop onion and garlic. Heat oil in saute pan and saute garlic and onion until translucent. Add shrimp and cook until just done (shrimp should be all white). Place into a bowl with any scraping from the pan. Chop the fresh dill, and to bowl with lemon, salt and pepper. Cover and refrigerate for 3-4 hours, turning occasionally.
