Cannellini Bean Salad

 This is an easy salad to make when you need to put something together quickly for an appetizer or salad and you don't have much in the fridge. Everyone loves it and it is healthy, appetizing, and everyone loves it!

Ingredients:
  • one 19  oz can of cannellini beans or dried soaked overnight
  • 1/2 medium red onion diced fine
  • 3 TBS chopped fresh parsley
  • 1/4 cup olive oil
  • juice from half a lemon
  • 3 TBS white wine vinegar
  • dash red pepper flakes
  • 1/4 tsp salt
  • 1/4 tsp pepper
