Dilled Potato Salad
  • 2  bags of mini potatoes
  • 1 small onion chopped
  • 1 yellow or red pepper chopped
  • 1/3 cup sour cream
  • 1/3 cup mayo
  • 2 tablespoons of fresh dill (chopped) or 1 tablespoon dry
  • salt and peper 
  • wash and scrub potatoes and cut into quarters
  • put into saucepan, cover with water and put on the stove bringing to a boil.  Cook until the potatoes are tender
  • chop veggies and set aside
  • mix the rest of the ingredients and set aside
  • when potatoes are done, take off the stove and drain in a colander and to cool in the bowl
  • add veggies
  •  add dressing mixture a half at a time or until you reach the desired about of dressing in the salad
  • salt and pepper to taste
  • cover and put into frig to chill
