Chicken Paprikash
CindyThis dish goes great served with potato dumplings.
Ingredients:
  • 1 3-4 lb chicken cut up
  • 1/2 cup vegetable oil
  • 1 TBS kosher salt
  • 1 tsp pepper
  • 1/4 cup paprika
  • 2 tsp garlic powder
  • 1 large vidalia onion or 3 medium yellow onions 
  • 1 TBS hot pepper flaks
  • 1 green pepper diced
  • 1 jalapeno pepper diced
  • 1 beef buillion cube
  • 1 32 oz box chicken broth
  • 1 14 1/2 oz can chicken broth
  • 1 small can tomato paste
  • 8 oz sour cream
Directions:
  • Clean and pat dry chicken parts
  • Place in large bowl and sprinkle with 1/4 cup vegetable oil, 2 TBS paprika, salt and pepper 
  • Toss to coat all chicken parts...can cook right away or let marinate as long as overnight to prepare the next day
  • Preheat oven to 350
  • Slice 1/2 vidallia onion or 1 and 1/2 yellow onions in stips and spread on a baking sheet
  • Place chicken parts on baking sheet over onions and not touching eachother
  • Place in oven and cook 1 hour
  • In a heated saucepan add remaining 1/2 of vidallia onion or remaing 1 1/2 yellow onios diced, diced peppers, hot peppper flakes, and garlic powder and sautee til carmelized
  • Add paprika and tomato paste and cook 5 minutes
  • Add chicken broth and beef buillion cube and simmer one hour
  • Strain broth through a seive
  • Return broth to saucepan and whisk in sour cream to thicken
  • Place cooked chicken parts in broth
  • Serve
