Stove Top Paella/Jambalya

Serve with hot crusty bread and a green leafy salad.

Ingredients:
  • 1 1/2 up of ham steak, cut into small cubes
  • 3 tablespoons of olive oil
  • 1 large green pepper-cubes
  • 1 large red pepper cubed
  • 1 large onion cubes
  • 4 cloves of garlic-chopped
  • 1 large can of crushed tomoates
  • 1 large box of spanish style rice
  •  4-5 cups of chicken stock
  • 3 tablespoons of jerk sauce
  • dash of hot sauce
  • 1 lb of cleaned, shelled, deveined shrimp
  • 1 lb of cleaned scrubbed mussels
  • salt and pepper
Directions:
  • saute ham in oil for 5 minutes
  •  add veggies and cook for 10 minutes
  • add can of tomatoes and cook for 5 minutes
  • add rice, chicken stock, jerk and hot sauce, cover and cook until the rice is al dente
  • make sure there is no rice sticking to the bottom of the pot
  • add seafood, covering it with the rice, cover with lid and cook for 10 minutes under a low heat
  • turn off stove with shrimp have turn white and mussels have opened
  • salt and pepper to taste
