Luke's Very Veggie Scramble

 In our house breakfast has always been big.  Luke likes to use whatever is fresh in the fridge to create a scramble.  You can serve it right out of the pan

Ingredients:
  • 6 eggs
  • 1 TBS butter
  • 1/2 red pepper diced
  • 6 mushrooms cut up
  • 1 small zucchini diced
  • 1/2 medium onion diced
  • 1/2 cup blanched brocoli diced
  • 1/2 cup shredded mozzarella 
Directions:
  • Blanche brocoli for 5 minutes in boiling water, dice and set aside
  • Dice up pepper, onion and zucchini 
  • In a bowl scramble eggs
  • Melt butter in a 12 inch frying pan 
  • Add onions, brocoli, zucchini, pepper
  • Cook about 10 minutes til vegetables are tender
  • Add egg mixture by pouring over veges
  • Cook eggs on medium heat constantly folding over from edges til combined
  • Add shredded mozzarella cheese and fold into eggs to melt 
  • Season with salt and pepper and serve
