Roasted Chicken with Tomatoes and Olives

Ingredients:
  • whole chicken cut up into pieces
  • 2 containers of cherry or grape tomates
  • 1 cup of pitted black olives halved
  • 4 garlic cloves
  • 1/2 red onion
  • 3 tablespoon olive oil
  • 1/2 cup of white wine
  • 1/4 cup chicken stock
  • salt and pepper 
Directions:
  • rub oil over chicken and set aside
  • mix veggies with liquids and place into a roasting pan
  • place chicken skin side in veggie mixture
  • place in pre-heated oven for 45 minutes or until the chicken is golden brown
  • remove chicken to a platter
  • slightly mash the veggies and pout over the chicken
