Spaghetti Bolognese (Meat sauce)
  • 2 marrow bones
  • 2 cans (1lb)whole tomatoes
  • 1/4 cup olive oil
  • 1 large onion diced 
  • 2 carrots minced
  • 4 cloves garlic minced
  • 1 1/2 lbs chop meat....1/2 lb ground beef, 1/2 lb ground pork, 1/2 lb ground veal
  • 1 bay leaf
  • 1 can beef broth
  • 1tsp red pepper flakes
  • 1-2 lbs spaghetti
  • 1 TBS dried basil or  6 fresh basil leaves and some set aside for garnish
  • 1 cup grated cheese to serve (romano, parmesan, asiago or combination)
  • Heat up a large sauce pot and then add olive oil to cover bottom of pot
  • Add marrow bones and brown for about 10 minutes, set aside
  • In same pot add diced onion, garlic, basil, pepper flakes, and bay leaf and sweat for about 5 minutes (may need to add a splash more olive oil)
  • In separate frying pan brown the chop meat and drain on paper bag or paper towels
  • Add canned tomatoes and cook 10 minutes and then with  a hand held mixing wand combine shred tomatoes to make a smooth consistency (can use a food processor, a potato masher, or can substitute pureed or crushed tomatoes in the can
  • Add bones, and browned meat  and when sauce is hot lower to simmer for at least  2 hours.
  • In separate pot boil water for spaghetti and cook el dente and drain
  • Serve over pasta with grated cheese and garnish with basil leaf
