Baba Ganoush

 This is a Middle Eastern favorite.  It is creamy with tahini and eggplant that you char right on the stove top.  Serve as an appetizer with some toasty pita bread.  I prefer baba ganoush over it's popular cousin hummus.

  • 1 large eggplant 
  • 1/4 cup tahini
  • 1/4 cup fresh lemon juice
  • 2 cloves minced garlic
  • 4 TBS olive oil
  • salt to taste
  • pita bread for dipping
  • parsley for garnish (optional)
  • Prick eggplant with fork in about 5 places
  • Preheat oven to 375
  • Place over gas stove or grill about 5 minutes on each side (can skip this step if you do not have them available) or until skin gets black
  • Transfer eggplant to a baking sheet and bake until very soft about 20 minutes
  • Let cool slightly and cut eggplant lengthwise and scoop out flesh into a mixing bowl
  • Mash eggplant with a fork
  • Add tahini, lemon juice, 2 TBS olive oil, and salt and combine
  • Drizzle with 2TBS olive oil
  • Garnish with parsley
  • Serve with toasted pita bread
