Warmed Grilled Vegetable Salad

Ingredients:
  • 1 large eggplant
  • 1 yellow zucchini
  • 1 green zucchini
  • 1 large ripe tomato
  • 1 large red bell pepper
  •  1 red onion
  • 3 garlic cloves
  • 1 box of cleaned greens
  • 2 tablespoons pesto
  • 1/3 cup olive oil
  • 2 tablespoons vinegar
Directions:
  • heat grill to med high
  • slice vegetables length wise
  • brush with oil and place flat side down on a grilling sheet  (including garlic)
  • place on grill and cook until tender and browned
  • while veggies are cooking, place lettuce in a bowl
  • take veggies off and place on cutting board and cut into 1/4-1/2 inch pieces 
  • add veggies to lettuce
  • whisk oil, pesto and vinegar
  • add dressing
