Pasta With Fresh Greens and Ricotta

 I like to make this quick pasta with whatever fresh greens I have or are in season.

  • 1 large bunch of fresh greens.... swiss chard, spinach,  broccoli rabe, dandelion greens, escarole, peas or any combination
  • 1/4 cup olive oil 
  • 2 cloves minced garlic
  • 1 minced shallot
  • 1 TBS red hot pepper flakes 
  • 1 lb pasta like penne or rigatoni
  • 1/2 lb ricotta cheese
  • 1/3 cup grated cheese (Romano. parmesan, asiago, or combination)
  • Place large pot of water for pasta to boil
  • Follow directions on pasta box and when done pasta aside drained (can toss with some olive oil to prevent from sticking)
  • Clean greens and chop if necessary to bite size proportion
  • Place greens in saute pan and cover with salted water and boil uncovered 8-10 minutes til tender
  • Remove greens and reserve water in cup
  • Using same now  empty saute pan add olive oil and when hot add shallot and garlic and cook about 5 minutes
  • Add greens and pepper flakes and season with salt and pepper
  • Add pasta and toss.  Use some of the leftover pasta water to toss (1/4-1/2 cup)
  • Serve with fresh ricotta cheese and grated cheese and additional pepper flakes if desired
