Shrimp Scampi
  • 2 lbs large raw shrimp, shells off and deveined
  • 6 cloves fresh garlic minced
  • 1 shallot minced
  • 3 TBS olive oil or enough to coat bottom of pan
  • 2 TBS butter
  • 1 lemon
  • 1/2 cup white wine or vermouth
  • 1/4 cup bread crumbs 
  • pinch red pepper flakes
  • salt and pepper to taste
  • Rice to serve with
  • Heat a skillet and coat with olive oil...season shrimp with salt and pepper, when hot add shrimp for just a minute, do not cook through, set aside
  • In same skillet melt  3TBS of butter and add the minced garlic and shallot saute for 2 minutes and add the a hot pepper flakes.  Do not brown
  • Add juice of 1 lemon and white wine and boil for about 5 minutes
  • Add the shrimp back to the pan saute slightly for one minute
  • Remove shrimp and mixture to a dish that can be placed under the broiler and is appropiate for serving
  • Place dish under broiler for about 5 minutes or until bread crumbs are golden brown
  • Garnish with parsley and lemon and serve with rice
