Baked Corned Beef

 This is a great way to make corned beef.  I love it for sandwiches.

  • 3lb corned beef (flat cut)
  • 1/2 cup pineapple juice
  • 1 cup brown sugar
  • 2 tsp powdered mustard 
  • Set up two large pots filled with cold water for boiling
  • Place rinsed corned beef in one and bring both pots to boil
  • Preheat oven to 350
  •  Remove corned beef from pot and place in extra pot (to make less salty)...simmer on low for 3-4 hours
  •  Combine pineapple juice, brown sugar, and mustard
  • Place corned beef in a baking dish and pour over corned beef
  • Bake 45 minutes
  • Remove corned beef from oven and let rest 15 minutes before cutting agaist the grain
  • Great for sandwiches
