Charred Tomato Salsa

Ingredients:
  • 6-12 fresh ripe tomatoes, cut in half and seeded (about 12 plum or 6 larger tomatoes)
  • 3 garlic cloves peeled
  • 1 red onion peeled and quartered
  • 1 jalapeno cut in half and seeded (leave some seeds if you want hot and spicy)
  • 2 TBS olive oil
  • 1 tsp ground cumin (optional)
  • 3 TBS fresh lime juice
  • 1/4 cup chopped fresh cilantro
  • pinch of salt
Directions:
  • Preheat broiler
  • In baking sheet place tomatoes, jalapemo, onion, and garlic
  • Toss in olive oil add a pinch of salt 
  • Place under broiler til slightly charred about 5-10 minutes checking often
  • Dice tomatoes, onions, and mince garlic and jalapeno
  • Place vegetables in a bowl and add chopped cilantro, cumion. and lime juice
  • Toss and serve with chips or use as garnish for eggs, fish, etc
