Chicken Piccata

 Classic Italian dish.  Easy to make and is an elegant presentation.  

Ingredients:
  • 1 lb boneless skinless chicken breasts or chicken strips
  • 1/3 cup all purpose flour
  • 4 TBS olive oil
  • 4 TBS butter
  • salt and pepper
  • 1/2 cup chicken stock or white wine
  • 1/4 cup fresh lemon juice
  • 1/4 cup capers
  • 1/4 cup chopped fresh parsley
  • 1/2 lemon sliced for garnish 
Directions:
  • Place chicken breasts between 2 sheets plastic wrap and pound til then with meat mallet or rolling pin....can use chicken strips and skip this step
  • Season flour with salt and pepper and dredge cutlets in flour
  • Place olive oil and 2 TBS butter in skillet and heat
  • When sizzling add chicken and brown on both sides (about 3 minutes each side) remove and set aside..do this in batches being careful not to over crowd
  • Bring pan back up to sizzle with remaining scraps and add white wine or chicken stock
  • Scrape pan to combine and let simmer til reduced by half about 10 minutes
  • Return chicken to skillet 
  • Add remaining 2 TBS butter and simmer about 10 minutes
  • Add capers
  • Transfer chicken with sauce to a platter and garnish with fresh parsley and lemon
