Liza's Chicken Parmesan
  • ! 1b chicken cultlets pounded flat
  • 1/2 cup unflovered bread crumbs
  • 1/2 cup grated cheese (parmesan, romano, or asiago or combination)
  • 1 egg beaten with 3 TBS water
  • 1/4 cup olive oil for frying
  • 8 oz mozarells sliced (fresh is best)
  • 1 quart marinara sauce
  • salt andpepper 
  • Fresh basil or parsley for garnish
  • Pound chicken cutlets thin by putting between plastic and pounding with meat tenderizer or rolling pin
  • dip chicken cutlet in beaten egg
  • Combine bread crumbs and grated cheese with salt and pepper on a flat dish
  •  Dredge egg covered cutlet in bread crumb mixture..set aside
  • In frying pan heat up olive oil
  • When pan is hot carefully place chicken cutlets in pan (do in batches)
  • Cook about 5 minutes each side on low to medium heat until browned
  • Remove to a baking dish with sauce covering bottom
  • Place a slice of mozarella on each fried cutlet
  • Sprinkle with grated cheese
  • Cover with sauce
  • Bake in pre heated oven for about half an hour or until cheese melts and begins to bubbble
  • Garnish with fresh basil or parsley
