Pureed Lentil Soup

Ingredients:
  • 1 cup diced onion
  • 3 chopped garlic cloves
  • 3 large carrots diced
  • 1/3 chopped red pepper
  • 2 tablespoons olive oil
  • 1 cup lentils
  • 3 cups vegetable stock
  • dash of white wine
  • salt and pepper 
Directions:
  • heat oil and saute veggies until tender
  • add white wine and vegetable stock, bring to a boil
  • add lentils, lower the heat and cover
  • when lentils are tender, remove from heat
  • take emulsion blender and blend soup until desired texture
