Cranberry and Pear Compote
CindyServe with turkey, pancakes, pork, yogurt. Can be made ahead of time up to a week.
Ingredients:
  • 1 1/2 cups water
  • 1/2 cup sugar
  • 3-4 large firm, ripe pears, peeled and diced into 1/2 inch pieces
  • 12 dried apricots, diced
  • 2 oranges, peeled, sectioned and cut into 1/2 inch pieces
  • 3 cups (1 12 oz bag) cranberrries 
Directions:
  • In a large saucepan, bring water and sugar to a boil, stirring occasionally
  • Stir in pears and apricots, reduce heat, and simmer uncovered for about 5 minutes
  • Stir in oranges, and continue simmering an additinal 2 minutes
  • Stir in the cranberries, and cook over medium heat for about 10 minutes, stirring occassionally (til cranberries pop)
  • Serve warm or cold
