Caesar Salad

 Try this salad and you will know why it was named after an emporer!  It can be a meal in itself or served as part of a meal.  You can add some protein like chicken, salmon, or shrimp.

  • 1 large head washed and chopped romaine lettuce
  • 1 egg yolk (can substitute a TBS of mayomnaise)
  • 3/4 cup olive oil
  • juice of 1 lemon
  • 4-5 anchovy filets or 2 tsp anchovy paste
  • 1 garlic clove mashed
  • 1 tsp dijon mustard
  • 1/4 tsp frsh ground pepper
  • 1 tsp kosher salt 
  • 1/2 cup grated parmesan cheese or shaved parmesan


  • 3 slices leftover bread cut in cubes
  • 1/4 cup olive oil
  • pinch oregano salt and pepper
  • 2 garlic cloves minced
  • 3 TBS grated parmesan cheese
  • If you have a food processor combine egg yolk, anchovies, garlic, mustard, salt and pepper til combined and then stream olive oil to make a creamy dressing...add half the grated cheese (1/4 cup) and pulse.  You can use a blender or a whisk if you don't have a food processor.
  • To make croutons heat a skillet and add olive oil
  • Add garlic and then bread and toast in the pan
  • Add salt and pepper and oregano
  • Add grated cheese at end and turn pan off
  • In large bowl place romaine lettuce leaves
  • Toss with caesar dressing and add remaining grated cheese
  • Top with warm croutons and serve
